If I disempower a Kayle, Justified who has been empowered 3 times, does she lose all of her empowered statuses?
No — she loses one. For every card other than Kayle, empowered is binary, but Kayle's text supersedes the rules and lets her stack up to 3 empowered statuses; disempower removes one at a time. Her empower ability can also be activated while she's already empowered — at 3 statuses it can still be activated, it just does nothing on resolution.
Can I disempower my own legend, like Ambessa, Matriarch of War, with Profiteer?
Yes. Control of legends can't change, so it rarely comes up, but you do control your own legend, and Profiteer can disempower it.
